Zucchini Noodles with Pesto and Shrimp

Ingredients:

  • 2 medium zucchini, spiralized
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 cup basil leaves
  • 1/4 cup pine nuts
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup olive oil

Instructions:

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the shrimp to the skillet and season with salt and pepper.
  3. Cook the shrimp for 2-3 minutes per side, or until cooked through.
  4. Remove the shrimp from the skillet and set aside.
  5. In a food processor, combine the basil, pine nuts, Parmesan cheese, garlic, and olive oil. Pulse until smooth.
  6. In the same skillet used to cook the shrimp, add the zucchini noodles and cook for 2-3 minutes, or until tender.
  7. Add the pesto to the skillet and stir to combine.
  8. Add the cooked shrimp to the skillet and toss to combine.
  9. Serve hot, garnished with additional Parmesan cheese and pine nuts if desired.
