Zucchini Noodles with Pesto and Shrimp
Ingredients:
- 2 medium zucchini, spiralized
- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- Salt and pepper to taste
- 1/2 cup basil leaves
- 1/4 cup pine nuts
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup olive oil
Instructions:
- Heat the olive oil in a large skillet over medium-high heat.
- Add the shrimp to the skillet and season with salt and pepper.
- Cook the shrimp for 2-3 minutes per side, or until cooked through.
- Remove the shrimp from the skillet and set aside.
- In a food processor, combine the basil, pine nuts, Parmesan cheese, garlic, and olive oil. Pulse until smooth.
- In the same skillet used to cook the shrimp, add the zucchini noodles and cook for 2-3 minutes, or until tender.
- Add the pesto to the skillet and stir to combine.
- Add the cooked shrimp to the skillet and toss to combine.
- Serve hot, garnished with additional Parmesan cheese and pine nuts if desired.
