Keto Cheesecake Bites
Ingredients:
- 2 cups almond flour
- 1/4 cup powdered erythritol or sweetener of your choice
- 1/2 cup melted butter
- 16 oz cream cheese, softened
- 1/2 cup powdered erythritol or sweetener of your choice
- 2 eggs
- 1 tsp vanilla extract
- Zest of 1 lemon
Instructions:
- Preheat the oven to 350°F.
- In a mixing bowl, combine the almond flour, 1/4 cup powdered sweetener, and melted butter. Mix until well combined.
- Press the almond flour mixture into the bottom of a 9x13 inch baking dish.
- In a separate mixing bowl, beat the cream cheese, 1/2 cup powdered sweetener, eggs, vanilla extract, and lemon zest until smooth and creamy.
- Pour the cream cheese mixture over the almond flour crust.
- Bake for 20-25 minutes, or until the cheesecake is set and the edges are golden brown.
- Let the cheesecake cool to room temperature, then cut into bite-sized pieces.
- Serve chilled, garnished with additional lemon zest if desired.
