Keto Cheesecake Bites

Ingredients:

  • 2 cups almond flour
  • 1/4 cup powdered erythritol or sweetener of your choice
  • 1/2 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup powdered erythritol or sweetener of your choice
  • 2 eggs
  • 1 tsp vanilla extract
  • Zest of 1 lemon

Instructions:

  1. Preheat the oven to 350°F.
  2. In a mixing bowl, combine the almond flour, 1/4 cup powdered sweetener, and melted butter. Mix until well combined.
  3. Press the almond flour mixture into the bottom of a 9x13 inch baking dish.
  4. In a separate mixing bowl, beat the cream cheese, 1/2 cup powdered sweetener, eggs, vanilla extract, and lemon zest until smooth and creamy.
  5. Pour the cream cheese mixture over the almond flour crust.
  6. Bake for 20-25 minutes, or until the cheesecake is set and the edges are golden brown.
  7. Let the cheesecake cool to room temperature, then cut into bite-sized pieces.
  8. Serve chilled, garnished with additional lemon zest if desired.
