Keto Cauliflower Fried Rice
Ingredients:
- 1 head of cauliflower, grated or chopped into small pieces
- 2 tbsp coconut oil
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 2 tbsp soy sauce or coconut aminos
- 1 tsp sesame oil
- 2 eggs, beaten
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions:

Heat the coconut oil in a large skillet over medium-high heat.

Add the onion and garlic and cook until fragrant, about 2-3 minutes.

Add the bell pepper and cook for an additional 2-3 minutes.

Add the grated cauliflower to the skillet and cook for 5-7 minutes, or until tender.

Add the soy sauce or coconut aminos, sesame oil, and beaten eggs to the skillet and stir to combine.

Cook for an additional 2-3 minutes, or until the eggs are cooked through.

Season with salt and pepper to taste.
