Keto Cauliflower Fried Rice

Ingredients:

  • 1 head of cauliflower, grated or chopped into small pieces
  • 2 tbsp coconut oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 2 tbsp soy sauce or coconut aminos
  • 1 tsp sesame oil
  • 2 eggs, beaten
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions:

  1. Heat the coconut oil in a large skillet over medium-high heat.

  2. Add the onion and garlic and cook until fragrant, about 2-3 minutes.

  3. Add the bell pepper and cook for an additional 2-3 minutes.

  4. Add the grated cauliflower to the skillet and cook for 5-7 minutes, or until tender.

  5. Add the soy sauce or coconut aminos, sesame oil, and beaten eggs to the skillet and stir to combine.

  6. Cook for an additional 2-3 minutes, or until the eggs are cooked through.

  7. Season with salt and pepper to taste.

  8. Serve hot, garnished with chopped green onions.
